Program Summary

Humber’s Baking and Pastry Arts Management two-year diploma program will prepare students for a dynamic career in the hospitality industry. Using Humber's state-of-the-art labs, students will learn how to create impressive and delicious baked goods and confections such as:

  • artisanal breads and breakfast pastries
  • blown, pulled and cast sugar pieces
  • chocolate sculpture
  • decorative cakes
  • ice creams, gelatos and sorbets
  • large quantity production
  • petit fours
  • plated desserts
  • tarts and pastries
During the first year of the program, students will learn the fundamentals of baking and pastry and develop valuable skills, creating baked goods and desserts that are both delicious and eye-appealing.  During the second year, students will learn the more complex and artistic elements of pastry including confectionery arts and chocolate work, practising both traditional and contemporary techniques. Throughout the program, essential skills in safety and sanitation, time management and organization, professionalism, and teamwork will be developed. In each course, students will learn about the career opportunities within this specialized field.

This program will also give students in-depth knowledge about bakery management and entrepreneurship, career readiness, computers and technology in the hospitality industry, as well as general education and communications skills.

Qualified students will complete an unpaid work placement in the baking and pastry industry in the Greater Toronto Area. Students can apply for placements anywhere in the world including Canada and Europe. This work-integrated learning opportunity has provided a jump-start to many students' careers.
